
Spinach, like most things, is much better when you cook it yourself. This was really good. Saute the onion. Add spinach. Cook just long enough to wilt. Add black eyed peas and lower to simmer. Pepper to taste.

Mahi Mahi with Miso and Bok Choy
I made my own version of the famous black cod recipe from Nobu. I used mahi because was on sale. I thought I'd have a little fun with plating, too.
